Slow Cooker Beef Stroganoff

I personally love using the slow cooker to make quick, neurodivergent friendly meals like this slow cooker beef stroganoff. One of the biggest benefits for me is that I’m notoriously bad at remembering to thaw out meat for meals. My neurosparkly brain just gets too focused on other things.

Next thing you know, I’m scrambling to think of something for dinner. With my slow cooker dump-and-go recipes, you can put the meat in there while it’s still frozen! And I have to do that all the time!

Here are some ways to simplify this slow cooker beef stroganoff…

The beautiful thing about this recipe is that it is simple to make, it tastes amazing…and I’ve given you some ideas to simplify it even more!

If you don’t have the energy to chop an onion, pick up a pre-chopped onion at the grocery store. You can also use pre-sliced mushrooms to make this meal even easier. I always use jarred minced garlic. That also simplifies this recipe.

I often put this over pasta. But if you’re struggling with your energy level, you can also put this over rice. Choose a simple microwavable rice that will be done in 90 seconds to complete your meal.

I live by myself, but still make this full meal and eat leftovers and freeze some for quick and easy meals when my energy is lower!

Slow Cooker Beef Stoganoff

Quick and easy nerurodivergent-friendly meal for your slow cooker

Ingredients Equipment Method

Ingredients
  

  • 1 1/2-2 lbs pre-cubed stew meat
  • 1/4 cup corn starch
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/2 tsp oregano
  • 1 med onion chopped
  • 8 ounces sliced mushrooms
  • 2-3 cloves minced garlic
  • 8 ounces beef broth
  • 1 cup sour cream

Equipment

  • 1 Slow cooker

Method
 

  1. Spray the slow cooker with non-stick spray
  2. Add all ingredients except sour cream into the slow cooker
  3. Cook on low for 8 hours
  4. 10 minutes before serving, stir in the sour cream.
