Slow-Cooker White Chicken Chili

I spent a lot of my life eating fast food and frozen dinners, especially on those days when my energy and executive function are low. But it was important for me to start incorporating healthier, home-cooked meals. But that was a struggle on the days when I was struggling to function until I discovered the slow-cooker and started creating some simple dump-and-go recipes like this slow-cooker white chicken chili.

This recipe calls for simple ingredients. And if your energy is lower, you can substitute ingredients such as pre-cut onions instead of having to cut them yourself. For me, it is all about making things as easy as possible. But it still allows me to make good, homemade meals.

This recipe can be made gluten-free. Just use arrowroot powder or cornstarch as your thickener.

I love this white chicken chili topped with some cheese and served with a side salad.

Slow-Cooker White Chicken Chili

This quick and easy meal allows you eat something tasty and healthy, even when your energy is lower.

Ingredients Equipment Method

Ingredients
  

  • 1 tbsp arrowroot powder or cornstarch
  • 1 med onion chopped
  • 1 can chopped green chilies drained
  • 1 can great north beans drained and rinsed
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 lb chicken breasts or thighs boneless and skinless
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 cloves garlic

Equipment

  • 1 Slow cooker

Method
 

  1. Add all ingredients to the slow-cooker
  2. Cook on low for 4-5 hours
  3. Shred the chicken with two forks and serve
