Simple Egg Salad

I have always dreaded having to figure out what to eat for lunch. But one thing that I fix regularly, because I love it so much, is egg salad. I love how versatile this recipe has been for me. I can use it in a sandwich or wrap. But there are a lot of times when I don’t want a sandwich. So instead, I slice up some cucumbers or grab some crackers from the cupboard and dip those into the egg salad.

Now, let me be honest for a minute…I hate hard-boiling eggs. Whenever I would attempt to do that on the stovetop, I always struggled to get them right. But one thing that has really helped (and cuts down the cooking time) has been to do my hard-boiled eggs in my Instant Pot! This recipe has been foolproof for me. The eggs come out perfectly every time, and it is so easy to get the shells off, too!

This is pretty much my summer go-to lunch, and it’s SO yummy!

Ingredients Method

Ingredients
  

  • 2 eggs
  • 2 tbsp mayonnaise
  • 1 tsp mustard
  • 1/2 dill pickle chopped or 1-2 tbsp dill relish

Method
 

  1. Hard boil the eggs
  2. Allow to cool, then peel.
  3. Place eggs in a small bowl and mash with a fork.
  4. Add mayo, mustard and chopped pickle and mix well.
  5. Serve with sliced cucumber, celery or in a lettuce wrap.
