I just have to be honest for a minute. There are plenty of times when I come home after working, and my energy is completely gone. Sadly, that happens more than I would like it to! Of course, when my energy is low, I still need to eat. So I love to have simple and quick recipes on hand to make for dinner, so that I’m not stuck eating frozen dinners and fast food. This chicken taco bowl is one of my favs! I have made it completely from scratch…cooking the rice, baking the chicken, chopping veggies. But I’ve also found some easy workarounds for those days when my energy is really low! And I wanted to go ahead and share them with you! We do still have to eat, after all!
Simplifying ingredients
First, I don’t specify what kind of chicken to use. I often buy a rotisserie chicken from the local grocery store and use it for meals for a few days. I will shred some of that and use it in this recipe. Some stores also sell pre-shredded rotisserie chicken, and sometimes I get that for recipes if a whole chicken is too much. I have also grilled extra chicken breasts when grilling out and used that. A few times, I used some frozen, ready-to-eat chicken that I thawed.
When I’ve been busy…or low on energy, I’ve gotten onions, tomatoes, and bell peppers that were pre-cut for this recipe. That allows me to throw this together with little prep time! To reduce prep-time even more, feel free to skip adding the taco seasoning…unless you really want that flavor. Using plain chicken is just fine.
Also, if you want to eat grain-free, you can certainly substitute cauliflower rice for the rice. It works well both ways!

- In the microwave, heat the rice
- Place cooked rice in a bowl.
- Add pre-cooked chicken to a microwave-safe bowl. Sprinkle with taco seasoning, salt, and water, and mix well
- Heat the mixture until heated through
- Place chicken on top of rice.
- Top with the remaining ingredents and enjoy!
