Slow Cooker Chicken Parmesan

kathyseppamakiFebruary 8, 2026June 11, 2026

I love simple recipes. The simpler they are…the better! This slow-cooker chicken parmesan is one of those recipes. There’s very little work involved in making this recipe. It’s one of the simplest “throw-and-go” recipes in my arsenal, and it’s also an Italian classic!  No standing over the stove, juggling 15 ingredients and 10 steps. Just real food that’s simple to make. And my brain LOVES that!

The one thing that being an AuDHD woman in midlife has taught me is that eating well isn’t about perfection. It’s about supporting my nervous system. Not doing more to overstimulate it…especially when it’s already somewhat overstimulated. This recipe is simple, quick, and requires very little of me, which is exactly what I need most days.

The chicken parmesan itself is naturally gluten-free and grain-free. Serve it over regular pasta, gluten-free pasta, or even zoodles for a complete meal.

This recipe also freezes really well, so make a larger batch when you have more energy. Then you can pop individual servings in the freezer, and you’ll have some quick and easy homemade frozen dinners when your energy is low!

Hi, I’m Kathy!
I discovered I’m autistic and ADHD (AuDHD) in midlife—right in the thick of menopause and a full-on identity unraveling. Now, I’m on a journey to unmask, heal, and rediscover who I really am. This blog is where I share the messy, magical path of being neurodivergent in midlife, and finally coming home to myself.
