It’s summertime here in South Carolina, and that means temperatures in the mid to upper 90s and lots of humidity. Now, I will be the first to admit that I don’t do well in the heat. Having to spend time outside when it’s near triple digits quickly throws my brain into sensory overload! When it’s this hot outside, the last thing I want to do is eat a hot meal. That just makes me even hotter! These are the days when I love making some homemade chicken salad!
This chicken salad is a summertime go-to meal for me. Sometimes I will make it into a sandwich or wrap. On other days, I dip crackers or sliced cucumber into it and indulge. It is seasonal comfort food for me…and fortunately, it is incredibly simple to make!
If you have leftover chicken, this is a great way to use it up. I love buying a rotisserie chicken from the store and using leftovers to make this! And many stores offer pre-shredded rotisserie chicken that can be used too! Of course, you can always use canned chicken in a pinch…but honestly, the rotisserie chicken has better flavor! So that is always my go-to!
