Certain comfort foods just feel like a hug to me, and I’ll be honest, mashed potatoes are definitely one of them. I’ve always loved them. Especially if they’re homemade! But on days when my AuDHD brain has me dealing with low executive function, homemade mashed potatoes can feel like way too much work. On those days, I just don’t have the energy to peel, chop, boil, drain, and mash them. It’s a lot of steps and a lot of dishes. And if my energy is shot, it is a lot of mental load for something that’s supposed to be simple.
That’s why I started making them in the Instant Pot, and honestly, it has changed everything. No heavy pots to drain. No babysitting boiling water. Just toss everything in, press a button, and come back to perfectly soft potatoes that are ready to mash…right in the pot. It doesn’t get easier than that.
This has allowed me to make mashed potatoes for myself, even when I’m struggling with energy. In fact, doing it this way now makes it just as easy as making instant potatoes…but the homemade kind tastes SO much better! I love topping them with just plain old butter and some salt. But you certainly can add what you like.

- Add the butter and milk/cream
