Let me be honest…I’m not the biggest salad lover in the world. On occasion, I do enjoy one. And I definitely prefer them during the hottest time of the year, because they are cooling to the body to eat. But there is one salad I will eat any time of year…and that’s a Greek salad. I LOVE a good Greek salad! I will say that a Greek salad during the summer with fresh cucumber and tomatoes is the absolute best! There is nothing that compares to those flavors.
I love that this is a simple salad, but with lots of flavor. Of course, if your energy is low, you can skip cutting up tomatoes and onions. I often use small grape tomatoes and leave them uncut. And pre-cut onions can be found at most grocery stores. Unfortunately, there isn’t a simple workaround for sliced cucumber, but if you are really struggling with your energy, just leave them off the salad.
I have a couple of go-to Greek salad dressings I love. The Aldi version is my absolute favorite! Also, you can purchase crumbled Feta cheese instead of the block kind. Much easier to pour onto your salad.
This recipe is not about exact measurements. It IS about you adding things according to your taste. I may like more Feta or olives than you do. So do you when you make this recipe. You can make as much…or as little as you want. And you’ll enjoy it more!
