I’m kind of ashamed to say that I spent a lot of my adult life eating fast food and frozen dinners…especially on those days when my energy and executive function are low. But it was important to me to start cooking healthier, home-cooked meals. Honestly, that was really hard on the days when I was struggling to function. That was until I discovered how easy it could be to use the slow-cooker. Then I started creating some simple dump-and-go slow-cooker recipes like this slow-cooker white chicken chili. That has made a HUGE difference in how I eat.
This recipe calls for really simple ingredients. And if your energy is low, you can substitute ingredients such as pre-cut onions instead of having to cut them up yourself. For me, it is all about making things as easy as possible. But it still allows me to make good, healthy, homemade meals.
It’s easy to make this recipe gluten-free. Just use cornstarch or another gluten-free thickener in the recipe.
