Air Fryer Chicken Leg Quarters

kathyseppamakiJanuary 15, 2026June 12, 2026

I’m always on the lookout for dinners that are budget-friendly and don’t drain what little energy I have left at the end of the day. One of my favorite go-tos? Simple chicken leg quarters. They’re affordable, they taste amazing when cooked right, and they don’t demand a ton of energy to prepare.

There is one thing I don’t love…heating up the whole kitchen by turning on the oven. Living in South Carolina means summers that are already sweaty and gross…especially when you’re post menopausal! And the last thing I need is my oven adding even more heat to the kitchen. Once the temps hit over 85 degrees, anything that requires the oven is immediately banished until fall.

That is… until I got an air fryer.

When I realized I could air fry chicken leg quarters, I swear I did a little happy dance in my kitchen. The first time I made one, I couldn’t believe how well it turned out. The skin came out perfectly browned and crispy, while the meat stayed tender and juicy. It honestly felt like a small win.

From that point on, the air fryer became my official chicken-leg-quarter small appliance of choice. I don’t think I’ll ever cook them any other way, unless I need a large batch.

And because I’m all about simple recipes…especially with my AuDHD brain, I keep the prep ridiculously easy. A little spray of olive or avocado oil over the skin, a sprinkle of whatever seasoning blend I’m loving at the moment (my current love is an organic adobo mix that is so yummy), and into the air fryer it goes. No fuss and no extra steps!

This meal is naturally gluten and grain-free, too. Just double-check your seasoning blend if that matters to you. I usually pair it with a quick salad or some pre-cooked rice I can heat up in minutes.

100% a one-spoon meal. And it’s a lifesaver on the days when midlife, neurodivergence, and Southern heat all team up at once.

Hi, I’m Kathy!
I discovered I’m autistic and ADHD (AuDHD) in midlife—right in the thick of menopause and a full-on identity unraveling. Now, I’m on a journey to unmask, heal, and rediscover who I really am. This blog is where I share the messy, magical path of being neurodivergent in midlife, and finally coming home to myself.
