Salsa Chicken for One

I love recipes that require little prep time because they are perfect for those busy days when you have a lot to do, but still want a homemade meal. Or the days when you have little to no energy. This salsa chicken recipe is so simple, but it tastes amazing! And it’s one of the recipes I make with a super short prep time.

I enjoy Mexican food a lot. But some days I don’t want tacos, but still want something with amazing Mexican flavor. And it only has four ingredients. Did I mention how simple this recipe is? I have been making this recipe using homemade taco seasoning mix, but your favorite store-bought variety will work just as well. I usually use organic store-bought salsa for this recipe. I’m not sure how well homemade would work with it, but if you’re brave, give it a try!

I love to pair this salsa chicken with some Mexican yellow rice, refried beans, or a nice salad.

This recipe is naturally gluten-free…as long as the taco seasoning mix you use is as well. Many brands are not!

I keep this recipe in my regular meal rotation because it’s so easy and tastes so good!

Salsa Chicken

A delicious Mexican-inspired main dish that takes almost no time to prepare!

Ingredients Method

Ingredients
  

  • 1 chicken breast boneless and skinless
  • taco seasoning
  • 1/2 cup salsa
  • 1/4 cup cheddar cheese shredded

Method
 

  1. Preheat the oven to 375 F
  2. Lightly grease an 8x8 baking dish
  3. Place the chicken breast in the baking dish
  4. Sprinkle the taco seasoning on both sides of the chicken breast
  5. Pour the salsa on top of chicken
  6. Bake for 30-35 minutes (to an internal temperature of at least 165 degrees F)
  7. Remove from the oven
  8. Sprinkle cheese on top of the chicken
  9. Bake for another 5 minutes, until the cheese is fully melted
  10. Remove from oven and enjoy!
