It’s the kind you throw together earlier in the day and let quietly become something nourishing while you go live your life. No standing over the stove. No juggling ten steps. Just real food, familiar flavors, and the gift of ease.

Midlife has taught me that feeding myself well isn’t about perfection; it’s about support. Support for low-energy days, overstimulated nervous systems, busy brains, and seasons when cooking feels like one more thing on an already full plate. This recipe is cozy, grounding, and forgiving, which is exactly what I need most days.

Whether you’re navigating neurodivergence, burnout, perimenopause, or simply craving a meal that feels like a gentle exhale, this slow-cooker chicken parmesan is here to make dinner simpler and a little more comforting.

The chicken itself is naturally gluten-free and grain-free. Serve it over regular pasta, gluten-free pasta, or even zoodles for a complete meal.

This chicken parmesan recipe also freezes well, so make a larger batch when you have more energy, and pop individual servings in the freezer, and you’ll have some quick and easy homemade frozen dinners when your energy is low!

Slow Cooker Chicken Parmesan

This slow-cooker chicken parmesan is the kind of recipe you throw together earlier in the day and let quietly become something nourishing while you go live your life.

Ingredients Equipment Method

Ingredients
  

  • 1 lb chicken breasts boneless and skinless
  • 1 jar spaghetti sauce
  • mozzarella slices

Equipment

  • 1 Slow cooker

Method
 

  1. Place chicken breasts in bottom of slow cooker
  2. Top with the jar of spaghetti sauce
  3. Cook on low for 7-8 hours or high for 4-5 hours.
  4. 10-15 minutes before the chicken is finished, top with the mozzarella slices and allow them to melt fully
  5. Serve with pasta and top with some parmesan cheese
