When it comes to cooking, for me, it is all about simplicity. There are so many days I don’t have the energy to spend a lot of time in the kitchen. So having some great, quick, simple meals that require very little prep time is a game-changer! This smoked sausage and veggies recipe definitely falls into that category! It is a “dump and go” recipe that allows me to prepare meals quickly.
It allows me to eat more healthy, home-cooked meals and rely less on fast food or highly processed foods. And that is a big deal for me. I spent a good chunk of my life living on fast food and frozen dinners. Those meals weren’t giving my body the nutrients it needed, and I wanted to start cooking with more whole food ingredients.
But the process of cooking can be so daunting when you struggle with a lack of energy! That’s why I am committed to creating and sharing recipes that are neurodivergent friendly and “low-spoon”.
Please feel free to add some additional seasoning that you enjoy. If you want to use a spicy sausage, then go ahead and top it with some Cajun seasoning! Make it your own!

Dump and Roast Smoked Sausage and Veggies

- Preheat oven to 425 F
- Cut up the smoked sausage and spread out on the baking sheet
- Dump butternut squash, broccoli and cauliflower on the baking sheet
- Drizzle with generous amounts of olive oil
- Season iwth salt, pepper and minced garlic
- Roast for 25-30 minutes
