Chia Pudding with Summer Berries

kathyseppamakiJuly 2, 2025November 19, 2025

Some days, even thinking about cooking feels like too much. The thought of standing at the stove or chopping a bunch of ingredients can be overwhelming, especially on those low-spoon days when your energy is limited. That’s where simple, no-cook recipes like this chia pudding with summer berries come in like little acts of self-kindness.

This chia pudding with summer berries is one of those magical recipes that feels indulgent. It also looks beautiful and requires almost no effort. You just mix together a few nourishing ingredients and let the fridge do the work. Then you wake up to a cool, creamy treat that’s ready when you are. It’s made with whole food ingredients, naturally gluten-free, and perfect for anyone looking to eat well without burning out.

Nutritional Benefits of Chia Seeds:

  • High in Fiber: Great for digestion and can help you feel fuller longer—about 10g of fiber per 2 tablespoons!

  • Rich in Omega-3s: Especially alpha-linolenic acid (ALA), a plant-based omega-3 that supports brain and heart health.

  • Good Source of Plant Protein: They contain all nine essential amino acids, making them a complete protein.

  • Packed with Minerals: Especially calcium, magnesium, phosphorus, and iron, essential for bone health and energy.

  • Antioxidant-Rich: Helps fight inflammation and protect cells from damage.

  • Stable Blood Sugar Support: The fiber + healthy fats combo helps slow down sugar absorption, promoting balanced energy.

Whether you enjoy it for breakfast, a midday recharge, or a gentle dessert, this chia pudding is a gentle, sensory-friendly way to care for yourself, with flavor and freshness that feels like summer in a jar.

This chia pudding is also naturally grain-free. Depending on the milk you use to create this recipe, it can also be dairy-free. Just opt for a dairy-free option!

Hi, I’m Kathy!
I discovered I’m autistic and ADHD (AuDHD) in midlife—right in the thick of menopause and a full-on identity unraveling. Now, I’m on a journey to unmask, heal, and rediscover who I really am. This blog is where I share the messy, magical path of being neurodivergent in midlife, and finally coming home to myself.
