Chia Pudding with Summer Berries

Ingredients
  

  • 1 1/2 cups milk can substitute non-dairy milk
  • 1/4 cup chia seeds
  • 1-2 tbsp maple syrup or honey
  • 1 cup summer berries choose the berries you like!

Method
 

  1. In a mixing bowl or jar, whisk together milk, chia seeds, maple syrup, and vanilla.
  2. Let sit for 10 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight until thick and pudding-like
  4. When ready to serve, layer the pudding with fresh berries and a sprinkle of coconut or mint if using
  5. Enjoy as a refreshing breakfast, snack, or light dessert.
