Slow Cooker Chicken and Potato Soup

I don’t know about you but I am a very seasonal eater. During the warmer months of the year, I love to eat foods that are cooler. I eat plenty of fresh fruits and vegetables because they are readily available. And I choose foods that are generally lighter. As the seasons change to fall and winter I begin craving soups and stews with hearty root vegetables. And casseroles. The foods are warmer and heavier. The body naturally craves heartier foods to get through the cold winter months. I love this slow-cooker chicken and potato soup! It’s one of my favs!

What’s funny is that I have an aversion to eating soup during the summer. It makes me too hot! But once September rolls around I can’t wait until it’s cool enough to begin making this chicken and potato soup!

This soup is very much like the ones that many grandmothers would make. Our grandmas knew how healing food could be! Why do you think they so often turned to homemade soup when someone was sick?

I love using Herbes de Province in many of my soup recipes. This herbal blend comes from the Province region in southeastern France. It typically includes herbs such as thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf. This blend creates a beautiful flavor that I really love.

And when you look at some of the healing properties of the herbs in this blend, you can see why it can be so beneficial to use it for a little kitchen magick!

Thyme-Great for a cough. Natural expectorant.

Basil- Important for immune system support.

Rosemary- A natural antiviral.

Tarragon- Very calming for the nervous system.

Marjoram-Used to calm the nervous system.

Oregano-Strong antiviral.

Bay leaf- Supports the immune system and is a strong antimicrobial herb.

If you use homemade broth or even bone broth, this recipe becomes even more healing for the body. Bone broth is beneficial for gut health. Homemade broths don’t contain the additives that store-bought broths do.

Slow Cooker Chicken and Potato Soup

This simple soup is also easy to prepare. It's not only filled with whole fresh ingredients and herbs that are healing for the body, but it also tastes amazing too!

Equipment

  • 1 Slow cooker

Ingredients
  

  • 1 lb Chicken thighs boneless and skinless
  • 2 cups potatoes diced
  • 1 cup celery chopped
  • 1 cup carrots chopped
  • 1/2 cup onion chopped
  • 1 tsp Herbes de Province
  • 1 tsp sea salt
  • 4 cups chicken stock or bone broth
  • 2-3 cloves garlic minced

Instructions
 

  • Add all of your ingredients to your slow cooker.
  • Cook on low for 7-8 hours or high for 4-5.

Notes

This soup freezes well. So make a double batch and freeze some for quick and easy dinners!
