This Southwest Chicken Corn Chowder is creamy, flavorful, and just a little bit spicy, with tender chicken, sweet corn, and bold southwest seasonings. It’s the perfect comfort food with a kick, and it comes together with minimal prep, just toss everything in, let it simmer, and enjoy a cozy, satisfying meal that tastes like it took all day to make.
This is one of my favorite slow cooker recipes! I love to pair it with some homemade banana or apple cinnamon bread for such a tasty meal!
Because of the long cook time, you can use frozen chicken. I have also substituted leftover deli rotisserie chicken in this recipe, and it worked well! To make this even easier, you can use pre-cut onions and bell peppers. I always use jarred minced garlic in my recipes. Anything I can do to make things easier on those days when energy isn’t so high.
If you’re into spicy, you can always add some cayenne pepper for some additional heat.
