Some days, lunch feels like one more impossible task on a never-ending to-do list. Especially when my energy is low and I’m struggling with a lack of executive dysfunction. That’s when I turn to my lazy chickpea salad wraps, a quick, nourishing meal that comes together in minutes with almost no effort. Using just a can of chickpeas and a few simple mix-ins, you can have a creamy, protein-packed filling ready to scoop into wraps, pita bread, or even onto crackers if that’s what your spoons allow. It’s budget-friendly, customizable with whatever you have in the fridge, and best of all, it tastes just as good the next day. This is one of those low-spoon recipes that makes eating well feel easy, even on your busiest (or lowest energy) afternoons.

You can make these lazy chickpea salad wraps gluten-free or grain-free by using tortillas, pita, bread, or crackers that are gluten-free or grain-free.  This recipe is naturally dairy-free.

Low-spoon tip:

  • Use pre-chopped salad kits instead of plain greens.

  • Add some canned chicken for extra protein.
  • Double the batch and store the chickpea mix in the fridge for 3–4 days—instant lunches all week.

  • Feel free to add other vegetables if you want. This is also great with chopped tomatoes!
  • You can also eat the filling with crackers or straight from the bowl if wrapping feels like too much work.

Lazy Chickpea Salad Wraps

Here’s a low-spoon lunch recipe that’s quick, filling, and adaptable depending on what’s in your fridge.

Ingredients Method

Ingredients
  

  • 1 can chickpeas drained & rinsed
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tsp mustart
  • pinch salt and pepper
  • handfull pre-washed salad greens
  • 1-2 Tortillas or pita, bread, or crackers

Method
 

  1. In a bowl, mash chickpeas with a fork until mostly broken up (leave some chunks for texture).
  2. Mix in mayo/yogurt, mustard, salt, and pepper.
  3. Lay tortilla or bread flat, add a small handful of greens, then scoop chickpea mixture on top.
  4. Roll up (or just eat open-faced) and enjoy!
