10-Minute Instant Pot Mashed Potatoes

There are certain comfort foods that just feel like a hug, and mashed potatoes are definitely one of them. Creamy, cozy, and endlessly customizable. They’re the kind of side dish that can turn even the most chaotic day into something a little softer around the edges. But for many of us with AuDHD or low executive function, traditional mashed potatoes can feel like way too much work: peeling, chopping, boiling, draining, mashing, and trying not to forget the pot on the stove. It’s a lot of steps, a lot of dishes, and a lot of mental load for something that’s supposed to be simple.

That’s why I started making mashed potatoes in the Instant Pot, and honestly, it has changed everything. No heavy pots to drain. No babysitting boiling water. Just toss everything in, press a button, and come back to perfectly soft potatoes that are ready to mash directly in the pot. It doesn’t get more low-spoon than that.

Whether you’re making a quick comfort meal, prepping for the week, or need a dependable side that won’t drain your energy, these Instant Pot Mashed Potatoes are a total game-changer. Simple, satisfying, and almost impossible to mess up—exactly the kind of cooking we need when life feels overwhelming.

The easiest Instant Pot mashed potatoes for low-spoon days

Ingredients Equipment Method

Ingredients
  

  • 2 lbs potatoes peeled
  • 1 cup broth
  • 4 tbsp butter
  • splash milk or heavy cream
  • salt and pepper

Equipment

  • 1 Instant Pot

Method
 

  1. Add the whole, peeled potatoes and broth to the Instant Pot
  2. Cook for 8 minutes
  3. Do a quick pressure release
  4. Add the butter and milk/cream
  5. Mash right in the pot!
