Slow Cooker Mushroom Chicken

I love simple recipes that don’t require a lot of prep time. And I have created a bunch of recipes that are perfect for the slow cooker. My slow-cooker mushroom chicken couldn’t be easier! It takes less than 5 minutes to prepare! That makes this a great recipe for those days when you are low on energy!

I started cooking from scratch after I got married. My then-husband had some health issues that were impacting his daily life. And I wondered if moving away from fast food, frozen dinners, and junk food would benefit his body. So I began to gather some healthier recipes to cook from scratch. And went into the kitchen each day to cook our dinners instead of reaching for something “convenient”.

Slowly, but surely, eating healthier, along with other lifestyle change,s did help him. His health began to improve, and he was physically feeling better. I really love cooking from scratch now. Honestly, I think meals prepared from scratch just taste better. And I love knowing just what I’m putting in my body. If I’m honest, my body can’t get away with eating the way I did when I was in my 20s!

You can use any cream of mushroom soup for this recipe. I tend to opt for more natural brands or even homemade ones. Those options can also be good for those who are avoiding gluten, which some of the major brands contain.

For the prep, all you do is throw the ingredients into your slow cooker, turn it on, and let the food cook all day! You can serve this over rice, pasta, or potatoes. It works well with any of them! I love to make this with egg noodles and a side of green beans. It’s such a simple dish, but tastes SO good!

Slow Cooker Mushroom Chicken

This tasty dish takes only 5 minutes to prepare and is perfect for when you don't want to spend a lot of time in the kitchen!

Ingredients Equipment Method

Ingredients
  

  • 2 boneless skinless chicken breasts or 4 boneless, skinless thighs
  • 1/2 can cream of mushroom soup or 3/4 cup homemade
  • 1/4 cup fresh mushrooms chopped
  • 1 tbsp minced onion
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Equipment

  • 1 Slow cooker

Method
 

  1. Spray the crock of the slow cooker with organic olive oil spray.
  2. Put the chicken, soup, mushrooms, minced onion, sea salt and black pepper into crock
  3. Cook on low for 8 hours (if chicken is frozen) or 6 hours (if chicken is thawed)
