I love recipes that require little prep time because they are perfect for those busy days when you have a lot to do, but still want a homemade meal. This salsa chicken recipe is so simple, but tastes amazing! And it’s one of the recipes I make with a super short prep time.

I enjoy Mexican food a lot. But some days I don’t want tacos, but still want something with amazing Mexican flavor. And it only has four ingredients. Did I mention how simple this recipe is? I have been making this recipe using homemade taco seasoning mix, but your favorite store-bought variety will work just as well. I usually use organic store-bought salsa for this recipe. I’m not sure how well homemade would work with it, but if you’re brave, give it a try!

I love to pair this salsa chicken with some Mexican yellow rice, refried beans, or a nice salad.

This recipe is naturally gluten-free…as long as the taco seasoning mix you use is as well. Many brands are not!

I keep this recipe in my regular meal rotation because it’s so easy and tastes so good!

Hi, I’m Kathy!
I discovered I’m autistic and ADHD (AuDHD) in midlife—right in the thick of menopause and a full-on identity unraveling. Now, I’m on a journey to unmask, heal, and rediscover who I really am. This blog is where I share the messy, magical path of being neurodivergent in midlife, and finally coming home to myself.
