If you don’t have the energy to chop an onion, pick up a pre-chopped onion at the grocery store. You can also use pre-sliced mushrooms to make this meal even easier. I always use jarred minced garlic. That also simplifies this recipe.
I often put this over pasta. But if you’re struggling with your energy level, you can also put this over rice. Choose a simple microwavable rice that will be done in 90 seconds to complete your meal.
I live by myself, but still make this full meal andeat leftovers and freeze some for quick and easy meals when my energy is lower!
