Dump and Roast Smoked Sausage and Veggies

When it comes to cooking, for me, it is all about simplicity. There are so many days I don’t have the energy to spend a lot of time in the kitchen. So having some great, quick, simple meals that require very little prep time is a game-changer! This smoked sausage and veggies recipe definitely falls into that category! It is a “dump and go” recipe that allows me to prepare meals quickly.

It allows me to eat more healthy, home-cooked meals and rely less on fast food or highly processed foods. And that is a big deal for me. I spent a good chunk of my life living on fast food and frozen dinners. Those meals weren’t giving my body the nutrients it needed, and I wanted to start cooking with more whole food ingredients.

But the process of cooking can be so daunting when you struggle with a lack of energy! That’s why I am committed to creating and sharing recipes that are neurodivergent friendly and “low-spoon”.

Please feel free to add some additional seasoning that you enjoy. If you want to use a spicy sausage, then go ahead and top it with some Cajun seasoning! Make it your own!

This recipe is also food-allergy and intolerance-friendly. It is naturally gluten-free and grain-free.

Please note that there aren’t any measurements to this recipe. You can make as much or as little as you need!

Dump and Roast Smoked Sausage and Veggies

This quick and easy meal idea can be adapted to feed as many people as you need it to!

Ingredients Equipment Method

Ingredients
  

  • smoked sausage
  • frozen butternut squash
  • frozen broccoli and cauliflower
  • olive oil
  • salt and pepper to taste
  • garlic minced

Equipment

  • 1 baking sheet

Method
 

  1. Preheat oven to 425 F
  2. Cut up the smoked sausage and spread out on the baking sheet
  3. Dump butternut squash, broccoli and cauliflower on the baking sheet
  4. Drizzle with generous amounts of olive oil
  5. Season iwth salt, pepper and minced garlic
  6. Roast for 25-30 minutes
