Instant Pot Chop Suey

This dump-and-go version of a family favorite that requires very little prep time.

Ingredients
  

  • 1 lb stew meat
  • 1/2 small onion chopped
  • 3 stalks celery chopped
  • 14 oz Can of stir fry vegetables drained
  • 14 oz Can of bean sprouts drained
  • 1 cup water
  • 3 tbsp soy sauce
  • cornstarch for thickening

Equipment

  • 1 Instant Pot

Method
 

  1. Place all ingredients, except cornstarch into your Instant Pot
  2. Set on high setting and set timer for 35 minutes.
  3. Once the chop suey is done cooking, allow it to depressurize for at least 10 minutes.
  4. Mix a tablespoon or two with some cool water to form a slurry.
  5. Mix into the chop suey and allow it to thicken for 5 minutes.
  6. Serve over rice with soy sauce and chow mein noodles!
