Air Fryer Mexican Street Corn

This quick and simple air fryer street corn makes a great side dish for Taco Tuesday!

Ingredients
  

  • 1 ear of corn husked
  • 1 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp cotija or feta cheese crumbled
  • 1/4 tsp chili powder
  • 1/2 lime cut into wedges
  • salt to taste
  • 1/4 tsp smoked paprika (optional)
  • 1 tsp chopped cilantro (optional)

  • 1 Air Fryer

Method
 

  1. Preheat your air fryer at 400 F.
  2. Place the corn in the air fryer and cook, turning once halfway through, until the kernels are charred in spots and fully cooked (approximately8-10 minutes).
  3. In a small bowl, mix the mayonnaise and sour cream.
  4. Brush the grilled corn with the mayonnaise and sour cream mixture.
  5. Sprinkle the cheese over the corn. Make sure it sticks to the mayo mixture.
  6. Dust corn with chili powder and smoked paprika.
  7. Squeeze lime wedge over the corn for added flavor.
  8. Garnish with chopped cilantro and add a pinch of salt.
