It is strawberry season here in South Carolina! I love this time of year because there is nothing quite like the taste of berries picked fresh off the farm. They are so juicy and sweet. I always head off to the local farm stand to pick up a quart or two. This year I wanted to come up with some creative ways to use the berries. So I created this spinach strawberry salad recipe!
At a restaurant once I was served a sweet and savory salad that contained strawberries. It was love at first bite! Do you like salads? When I was younger, I couldn’t stand them! And when I had to eat them, I loaded them up with tons of croutons and drenched the whole thing with tons of “bad for you” salad dressings. How about a little lettuce with that dressing? Those salads certainly weren’t good for me! But now, I really appreciate the amazing flavors that a fresh salad contains. And I particularly enjoy salads during the warmer months of the year. I love experimenting with different salads to see how my taste buds respond.
Having seen others combine the sweet and savory tastes in salads and other dishes and figured that I would go ahead and try it out. Since strawberries were plentiful, I wanted to see how the combination of the berries, goat cheese, pine nuts, and balsamic vinaigrette worked. I did use my local berries in this recipe. If you have the chance to buy strawberries locally during berry season, do it! They are so much better than store-bought any day!
These ingredients really work well together and created a sweet and savory taste sensation. You don’t have to use spinach as your green for this salad. It also works with a nice organic spring mix too! I do use a homemade balsamic vinaigrette dressing. It’s super easy to make, and I know exactly what I’m putting in my body. I’m not eating anything that I’m sensitive to!
The beautiful thing about this recipe is that you make this spinach strawberry salad according to your taste….so add as much cheese, as many pine nuts, or strawberries as you like!
Spinach Strawberry Salad
- baby spinach
- 2-3 strawberries sliced
- goat cheese crumbled
- pine nuts
- balsamic vinaigrette
- Place the spinach on a salad plate or bowl.
- Top with sliced strawberries, pine nuts, and goat cheese.
- Drizzle on vinaigrette.
